It's the single biggest difference between a steak that cooks up rich and juicy and one that cooks up dry and bland — and it's exactly what the USDA measures when it grades beef.

This is Rosie — same pastures, same family, six generations. Every steak we sell comes from cattle raised on our own Texas ranch and processed in our own Fort Worth facility. Nothing comes off an auction barn floor or through a broker.

"Fresh" beef at a grocery store has been sitting in trucks and cases for days. We flash-freeze each cut at its peak, right after aging and cutting — so what thaws in your fridge is exactly the steak the butcher just cut. Vacuum-sealed and flash-frozen, it cooks up indistinguishable from fresh.

The insulated box and dry ice are built to keep your steaks cold and at a safe temperature on your porch for hours. Move them straight to your freezer when you get home, and they're perfect. If an order ever arrives warm to the touch, we replace it — that's the guarantee.

Yes. Dry ice is designed to run out right around delivery, so steaks that arrive firm and cold to the touch — but not rock-hard — are exactly as intended. USDA guidance for shipped perishable food is that it should arrive frozen, partially frozen, or refrigerator-cold. Cook them that day or put them straight into your freezer. The only time to call us is if a steak has reached room temperature and is no longer cool to the touch, or a seal is broken: don't cook it, text us a photo within 24 hours, and we'll replace it or refund it.
